Spiked Avocado Lemonade

Have your cocktail and vitamins too!

Spiked Avocado Lemonade

Prep time: 5 minutes. Yields: 6 servings


3/4 cup sugar

1/2 cup water

Few sprigs of fresh mint (optional)

Juice of 5 large lemons

1 cup ice cold vodka

1 large ripe avocado

5 cups cold water or seltzer*

*If using seltzer, add last, after blending


1. Juice all the lemons and pour the juice (no seeds!) into a blender.

2. In a small saucepan, over medium heat, combine sugar, mint and water. Stir until sugar is dissolved.

3. Add 1 cup of ice cold vodka and the flesh from one large avocado to the blender.

4. Strain the mint simple syrup into the blender.

5. If using water, add before blending. Blend to combine. If using seltzer, add after blending.

6. Pour over ice and serve with a sprig of fresh mint (optional). Cheers!


  • You can omit the mint or substitute it with basil, rosemary or tarragon.

  • You can sub limes for lemons.

  • I like to double this recipe for a crowd!
