With a few simple ingredients, you'll be enjoying this tangy dip in minutes.
Prep time: 10 minutes. Yields: 6 servings
2 large ripe avocados
1 clove garlic, minced
1/4 medium red onion, finely diced
2 tablespoons chopped cilantro
1 jalapeno, finely diced*
Juice of 1 small lime
1 teaspoon salt
1. Slice around the equator of the avocados. Twist to open. Carefully tap the pit with your knife to remove the seed. Scoop out the flesh into a bowl with a large spoon.
2. Add the other ingredients to the bowl. Start with the juice of half a lime, adding more to taste.
*When working with the jalapeno, be sure to taste a small piece to see how spicy it is. If it's mild, add the seeds and membrane.
3. Mash to combine and enjoy.
If you are not eating the guacamole right away, press plastic wrap over the top of the surface and refrigerate to avoid oxidation and discoloration.
