Who stole the cookies from the cookie jar?



Anyone can put a chocolate chip in a cookie, how about switching it up with lemon and pistachios instead?


“Ever since I was a little girl, I've loved to bake cookies and give them out as presents”

Ingredients:

  • 2.5 c flour

  • 2 sticks softened butter

  • 1.5 c brown sugar

  • 2 eggs

  • 1 tsp baking soda

  • 1/2 tsp salt

  • Zest of one lemon

  • 1 c pistachios

Directions:

  1. Preheat oven to 375°F.

  2. Cream together butter, zest and sugar until pale.

  3. Add eggs one at a time and mix to incorporate. Slowly mix in the flour, salt & baking soda . Fold in the pistachios.

  4. Drop by heaping tablespoons onto a cookie sheet. Bake for 10 min, let cool on the cookie sheet for a few minutes, before moving to a wire rack to finish cooling.
